Caramelized Chili Shrimp

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup water
  • 6 ounces rice noodles
  • 1 lb broccoli floret
  • 1 green onion, chopped fine
  • kosher salt & freshly ground black pepper
  • 3 tablespoons sugar
  • 1 tablespoon water
  • 1 tablespoon vegetable oil
  • 3 garlic cloves, sliced thin
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon fish sauce
  • 1 lb shrimp, peeled and deveined
  • 1/4 cup fresh cilantro, packed

Recipe

  • 1 in a skillet, heat water to boiling over high heat; add noodles and cook until tender, 1 or 2 minutes.
  • 2 remove 3 minules, with tongs, to a colander; rinse under cold water to stop cooking.
  • 3 once the water returns to a boil, add broccoli and cook until tender crisp, about 3 minutes.
  • 4 drain broccoli and toss with green onions and 1/4 teaspoons salt; set aside.
  • 5 wipe out skillet, add 1 tablespoon water and 3 tablespoons sugar over medium high heat, stirring to dissolve sugar, about 3 to 4 minutes (will turn an amber color).
  • 6 stir in oil, garlic, red pepper flakes; cook 10 seconds.
  • 7 stir in the fish sauce and shrimp; cook until shrimp is opaque, 2 to 3 minutes, stirring frequently.
  • 8 remove from heat and stir in cilantro and 1/4 teaspoon pepper.
  • 9 divide noodles and broccoli among serving plates; spoon shrimp and sauce over top.
