Cantonese-style Alaska Cod

Ingredients

- 1 lb cod fish fillet, thawed if necessary
- 1 tablespoon butter or 1 tablespoon margarine
- 2 teaspoons lemon juice
- salt, to taste
- fresh ground black pepper, to taste
- 1 tablespoon brown sugar (packed)
- 1 teaspoon cornstarch
- 2 tablespoons water
- 2 tablespoons cider vinegar
- 1 tablespoon soy sauce
- 1 cup diagonally sliced celery
- 1/2 cup canned pineapple chunk, drained
Recipe
- 1 cut cod into serving-sized pieces; place in shallow baking dish.
- 2 dot with butter; sprinkle with lemon juice.
- 3 season with salt and pepper.
- 4 bake at 450 degrees 8 to 10 minutes or until cod flakes easily when tested with a fork.
- 5 keep warm while making sauce.
- 6 combine brown sugar, cornstarch, water, vinegar and soy sauce in saucepan.
- 7 cook and stir 1 minute or until thickened.
- 8 add celery and pineapple; cook 2 minutes longer.
- 9 serve over cod.
