Cantonese-style Alaska Cod

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb cod fish fillet, thawed if necessary
  • 1 tablespoon butter or 1 tablespoon margarine
  • 2 teaspoons lemon juice
  • salt, to taste
  • fresh ground black pepper, to taste
  • 1 tablespoon brown sugar (packed)
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons cider vinegar
  • 1 tablespoon soy sauce
  • 1 cup diagonally sliced celery
  • 1/2 cup canned pineapple chunk, drained

Recipe

  • 1 cut cod into serving-sized pieces; place in shallow baking dish.
  • 2 dot with butter; sprinkle with lemon juice.
  • 3 season with salt and pepper.
  • 4 bake at 450 degrees 8 to 10 minutes or until cod flakes easily when tested with a fork.
  • 5 keep warm while making sauce.
  • 6 combine brown sugar, cornstarch, water, vinegar and soy sauce in saucepan.
  • 7 cook and stir 1 minute or until thickened.
  • 8 add celery and pineapple; cook 2 minutes longer.
  • 9 serve over cod.
