Baked Shrimp With Tomatoes And Feta

Ingredients

- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 (14 1/2 ounce) cans no-salt-added diced tomatoes, with juices
- 1/4 cup fresh flat-leaf parsley, finely minced
- 1 tablespoon fresh dill, finely minced
- 1 1/4 lbs medium shrimp, peeled and deveined
- 1/4 teaspoon salt, plus more to taste
- 1/4 teaspoon fresh ground black pepper, plus more to taste
- 2/3 cup feta cheese, crumbled (about 3 oz)
Recipe
- 1 preheat oven to 425°f.
- 2 heat oil in ovenproof skillet over medium high heat.
- 3 add onion and cook, stirring, until softened. (about 3 min).
- 4 add garlic and cook for 1 minute.
- 5 add tomatoes and bring to a boil. reduce heat to medium-low and simmer for about 5 minutes, until the tomato juices thicken.
- 6 remove from heat.
- 7 stir in parsley, dill and shrimp and season with salt and pepper.
- 8 sprinkle feta over top.
- 9 bake until shrimp are cooked through and the cheese melts, about 12 minutes.
