Baked Shrimp With Tomatoes And Feta

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 (14 1/2 ounce) cans no-salt-added diced tomatoes, with juices
  • 1/4 cup fresh flat-leaf parsley, finely minced
  • 1 tablespoon fresh dill, finely minced
  • 1 1/4 lbs medium shrimp, peeled and deveined
  • 1/4 teaspoon salt, plus more to taste
  • 1/4 teaspoon fresh ground black pepper, plus more to taste
  • 2/3 cup feta cheese, crumbled (about 3 oz)

Recipe

  • 1 preheat oven to 425°f.
  • 2 heat oil in ovenproof skillet over medium high heat.
  • 3 add onion and cook, stirring, until softened. (about 3 min).
  • 4 add garlic and cook for 1 minute.
  • 5 add tomatoes and bring to a boil. reduce heat to medium-low and simmer for about 5 minutes, until the tomato juices thicken.
  • 6 remove from heat.
  • 7 stir in parsley, dill and shrimp and season with salt and pepper.
  • 8 sprinkle feta over top.
  • 9 bake until shrimp are cooked through and the cheese melts, about 12 minutes.
