Chef Compton's Scalloped Oysters (multnomah Athletic Club)

Ingredients

  • Servings: 10
  • 1 pint willapoint oyster
  • 1 pint whole milk
  • 6 eggs
  • 1 lb soda cracker
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt

Recipe

  • 1 preheat oven to 300 degrees.
  • 2 grind or chop oysters with a sharp knife (not too finely). beat eggs and add oysters and milk to the beaten eggs. mix well.
  • 3 crumble crackers by hand (not too finely). fold into oyster mixture, adding salt and pepper. let mixture stand until firm.
  • 4 pour into a casserole dish. place dish in a pan of water and bake in preheated oven until firm (like a custard).
  • 5 serve at once.
