Cod Stew With Tomatoes

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 lbs cod fish fillets
  • 1 (28 ounce) can tomatoes, cut up
  • 1/4 teaspoon marjoram
  • 1/4 teaspoon basil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 3 celery ribs, chopped
  • 1/4 cup parsley, chopped
  • 4 slices toast

Recipe

  • 1 pour olive oil into deep pan on medium heat. add garlic & celery. saute briefly. add spices,tomatoes, and parsley. cover and simmer 30 minutes.
  • 2 meanwhile, salt fillets lightly and place in well greased steamer.
  • 3 steam over boiling water 10 minutes.
  • 4 pour sauce over fish.
  • 5 serve over toast points.
