Baked Chilled Salmon

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 (5 ounce) salmon fillets
  • 1/2 lemon, juice of
  • 1 tablespoon olive oil
  • salt and pepper
  • 4 dill sprigs (to garnish)
  • 4 lemon wedges (to garnish)
  • 1/4 cup light sour cream
  • 1/4 cup light mayonnaise
  • 2 tablespoons lemon juice
  • 2 tablespoons capers, drained and coarsely chopped
  • 2 teaspoons chopped fresh dill
  • 1 clove garlic, chopped
  • salt and pepper

Recipe

  • 1 preheat oven to 425.
  • 2 place salmon in a non-stick baking dish.
  • 3 drizzle with lemon juice and oil.
  • 4 season with salt and pepper.
  • 5 cover and bake 12- 15 minutes, or until cooked through.
  • 6 meanwhile, combine ingredients for sauce.
  • 7 when salmon is cooked, uncover and cool to room temperature.
  • 8 refrigerate until needed.
  • 9 top salmon with sauce and garnish with dill and lemon.
