Baked Chilled Salmon

Ingredients
- Servings: 4
- 4 (5 ounce) salmon fillets
- 1/2 lemon, juice of
- 1 tablespoon olive oil
- salt and pepper
- 4 dill sprigs (to garnish)
- 4 lemon wedges (to garnish)
- 1/4 cup light sour cream
- 1/4 cup light mayonnaise
- 2 tablespoons lemon juice
- 2 tablespoons capers, drained and coarsely chopped
- 2 teaspoons chopped fresh dill
- 1 clove garlic, chopped
- salt and pepper
Recipe
- 1 preheat oven to 425.
- 2 place salmon in a non-stick baking dish.
- 3 drizzle with lemon juice and oil.
- 4 season with salt and pepper.
- 5 cover and bake 12- 15 minutes, or until cooked through.
- 6 meanwhile, combine ingredients for sauce.
- 7 when salmon is cooked, uncover and cool to room temperature.
- 8 refrigerate until needed.
- 9 top salmon with sauce and garnish with dill and lemon.
