Baked Sole

Ingredients
- 1 lb fillet of sole
- salt
- 2 green onions
- 1/2 cup wine
- 1 tablespoon butter
- 1 tablespoon flour
- 1 tablespoon parsley, chopped
- 1/2 cup ripe olives, sliced
- 2 teaspoons lemon juice
Recipe
- 1 sprinkle fish with salt and arrange in oiled shallow baking dish. chop onions and sprinkle over fish. add wine and bake in 400* oven for 15 minutes. melt butter and add flour.
- 2 drain wine from fish into butter and flour mixture and cook over hot water, stirring until thickened. add parsley, olives and lemon juice. pour over fish.
