Baked Sole

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 lb fillet of sole
  • salt
  • 2 green onions
  • 1/2 cup wine
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 tablespoon parsley, chopped
  • 1/2 cup ripe olives, sliced
  • 2 teaspoons lemon juice

Recipe

  • 1 sprinkle fish with salt and arrange in oiled shallow baking dish. chop onions and sprinkle over fish. add wine and bake in 400* oven for 15 minutes. melt butter and add flour.
  • 2 drain wine from fish into butter and flour mixture and cook over hot water, stirring until thickened. add parsley, olives and lemon juice. pour over fish.
