Baked Salmon Dijon

Ingredients
- Servings: 4
- 4 salmon fillets (4 6 oz each)
- salt & pepper
- 3 tablespoons olive oil
- 3 tablespoons dijon mustard
- 2 tablespoons honey
- 1/4 cup panko breadcrumbs
- 1/4 cup finely-chopped macadamia nuts (or hazelnuts, or pecans)
Recipe
- 1 preheat the oven to 400 degrees f.
- 2 salt & pepper the fish.
- 3 mix together the oil, mustard, & honey.
- 4 in another bowl combine the panko and nuts.
- 5 brush the fish liberally with the honey-dijon mixture and pat about ¼ of the nut-crumb mixture on top of each fillet.
- 6 place on a greased pan and bake for approximately 15 minutes. (test the fish and if it flakes easily with a fork, then it is done.).
