Baked Flounder With Herbed Mayo And Vermouth

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 lbs flounder fillets (or sole fillets)
  • 3 tablespoons mayonnaise
  • 1/8 teaspoon thyme
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon marjoram
  • 1 pinch tarragon
  • 1 pinch rosemary
  • 1 pimentos, chopped
  • 1/3 cup dry vermouth
  • salt and pepper, to taste

Recipe

  • 1 wash, pat dry, and place fish in greased baking dish (11 1/2 x 7 1/2 x 1 3/4). fillets will overlap.
  • 2 thoroughly mix next 7 ingredients.
  • 3 spread mayo mixture on top of fish.
  • 4 pour vermouth over the fish.
  • 5 bake uncovered in a 350 degree oven for 30 minutes.
