Baked Flounder With Herbed Mayo And Vermouth

Ingredients

- 2 lbs flounder fillets (or sole fillets)
- 3 tablespoons mayonnaise
- 1/8 teaspoon thyme
- 1/8 teaspoon onion powder
- 1/8 teaspoon marjoram
- 1 pinch tarragon
- 1 pinch rosemary
- 1 pimentos, chopped
- 1/3 cup dry vermouth
- salt and pepper, to taste
Recipe
- 1 wash, pat dry, and place fish in greased baking dish (11 1/2 x 7 1/2 x 1 3/4). fillets will overlap.
- 2 thoroughly mix next 7 ingredients.
- 3 spread mayo mixture on top of fish.
- 4 pour vermouth over the fish.
- 5 bake uncovered in a 350 degree oven for 30 minutes.
