Cod Plaki

Ingredients

  • Servings: 6
  • 1 1/4 cups olive oil
  • 2 onions, thinly sliced
  • 3 large tomatoes, coarsely chopped
  • 3 garlic cloves, thinly sliced
  • 1 teaspoon sugar
  • 1 teaspoon chopped fresh dill
  • 1 teaspoon chopped fresh mint
  • 1 teaspoon chopped fresh celery leaves
  • 1 tablespoon chopped fresh parsley
  • 1 1/4 cups water
  • 6 cod steaks
  • 1 lemon, juice of
  • salt and pepper
  • parsley
  • dill
  • mint

Recipe

  • 1 heat the oil in a large saute pan. add the onions and cook until pale golden.
  • 2 add the tomatoes, garlic, sugar, dill, mint, celery leaves and parsley with 1 1/4 cups of water. season with salt and pepper, then simmer,uncovered, for 25 minutes, until the liquid had reduced by one-third.
  • 3 add the fish steaks and cook gently for 10-12 minutes, until the fish is just cooked.
  • 4 remove from the heat and add the lemon juice.
  • 5 cover and let stand for about 20 minutes before serving.
  • 6 arrange the cod on a serving dish and spoon the sauce over. garnish with the herbs.
  • 7 serve warm or cold.
