Ingredients

- 1 1/4 cups olive oil
- 2 onions, thinly sliced
- 3 large tomatoes, coarsely chopped
- 3 garlic cloves, thinly sliced
- 1 teaspoon sugar
- 1 teaspoon chopped fresh dill
- 1 teaspoon chopped fresh mint
- 1 teaspoon chopped fresh celery leaves
- 1 tablespoon chopped fresh parsley
- 1 1/4 cups water
- 6 cod steaks
- 1 lemon, juice of
- salt and pepper

Recipe
- 1 heat the oil in a large saute pan. add the onions and cook until pale golden.
- 2 add the tomatoes, garlic, sugar, dill, mint, celery leaves and parsley with 1 1/4 cups of water. season with salt and pepper, then simmer,uncovered, for 25 minutes, until the liquid had reduced by one-third.
- 3 add the fish steaks and cook gently for 10-12 minutes, until the fish is just cooked.
- 4 remove from the heat and add the lemon juice.
- 5 cover and let stand for about 20 minutes before serving.
- 6 arrange the cod on a serving dish and spoon the sauce over. garnish with the herbs.
- 7 serve warm or cold.
