Cheesy Baked Stuffed Tuna Melts

Ingredients
- 1 (6 ounce) can chunk light tuna
- 1/4 cup mayonnaise
- 1/2 teaspoon lemon juice
- 1 tablespoon capers, coursely chopped
- 2 tablespoons green onions, finely chopped
- 4 tablespoons cream cheese spread
- 4 slices tomatoes
- 4 tablespoons mozzarella cheese (or another mild cheese) or 4 tablespoons gouda cheese (or another mild cheese) or 4 tablespoons monterey jack cheese (or another mild cheese)
- 4 large kaiser rolls
Recipe
- 1 preheat oven to 375°f
- 2 in a bowl, combine drained tuna, mayonnaise, lemon juice, capers and green onion. set aside.
- 3 cut a thin slice from top of each roll (save the tops for later!); hollow out inside, leaving about 1/2-inch thick shell.
- 4 spread 1 tbsp cream cheese on bottom of each roll and then spoon tuna mixture evenly into each bun.
- 5 top each bun with a tomato slice and then sprinkle a tbsp of grated mozzarella (or whichever cheese you are using) on top of the tomato.
- 6 finally, place the top back on each roll. you may have to "smoosh" them down a bit. wrap each bun in foil and bake for about 20-25 minutes. :).
