Cheesy Baked Stuffed Tuna Melts

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 1 (6 ounce) can chunk light tuna
  • 1/4 cup mayonnaise
  • 1/2 teaspoon lemon juice
  • 1 tablespoon capers, coursely chopped
  • 2 tablespoons green onions, finely chopped
  • 4 tablespoons cream cheese spread
  • 4 slices tomatoes
  • 4 tablespoons mozzarella cheese (or another mild cheese) or 4 tablespoons gouda cheese (or another mild cheese) or 4 tablespoons monterey jack cheese (or another mild cheese)
  • 4 large kaiser rolls

Recipe

  • 1 preheat oven to 375°f
  • 2 in a bowl, combine drained tuna, mayonnaise, lemon juice, capers and green onion. set aside.
  • 3 cut a thin slice from top of each roll (save the tops for later!); hollow out inside, leaving about 1/2-inch thick shell.
  • 4 spread 1 tbsp cream cheese on bottom of each roll and then spoon tuna mixture evenly into each bun.
  • 5 top each bun with a tomato slice and then sprinkle a tbsp of grated mozzarella (or whichever cheese you are using) on top of the tomato.
  • 6 finally, place the top back on each roll. you may have to "smoosh" them down a bit. wrap each bun in foil and bake for about 20-25 minutes. :).
